Joaquin Avellan learned the craft of cheese making when he stayed with his father, who was recovering from heart surgery, in Venezuela. Helping on his father's dairy farm, Avellan was inspired by the process and by the cheese. He took his father's practices back with him and now sells cheeses made from raw cow's milk and aged for at least 60 days -- the "two moons" of the Dos Lunas name. The milk for the cheeses comes from grass-fed, free-roaming cows on Stryk Farms in Schulenburg, Texas.
