Cookbook author and chef John Shields is known nationally as "The Culinary Ambassador of the Chesapeake Bay." Gertrude’s, named after John's grandmother, dishes up a menu of creatively updated Chesapeake traditions for lunch, dinner, and a very-popular-with-the-locals brunch menu. Chef Shields has long been a champion of local food sourcing, focused on regional food traditions and good ecological practices. Gertrude’s maintains their own summer gardens for super-fresh organic herbs and seasonal vegetables, and composts all food and paper wastes through Baltimore’s Waste Neutral system. Compost is shared between the restaurant’s gardens and the gardens that students have created in a nearby elementary school.
